Cookies - Mom's Recipe

Ingredients:
Butter - 100 gm
Jaggery Powder - 1/2 cup + 2 tbsp extra
Wheat Flour (Atta) - 1 cup
Baking Powder - 1/2 tbsp
Baking Soda - 1/4 tbsp
Salt - a pinch
Cocoa Powder - 1/4 cup
Semolina (Bombay Rava) - 1 tbsp
Cardamom - 2
Directions:
Preheat your oven to 170 °C (338 °F).
In a mixing bowl, beat the room-temperature butter and jaggery together for about 5 minutes, until light and fluffy.
Crush the cardamom pods (or use ground cardamom) and stir them into the butter–jaggery mixture.
Add the remaining ingredients and continue mixing until everything clumps together into a soft dough.
Portion out the dough, then flatten each piece in your palm and press into fun shapes. Adding chocolate chips or other toppings is optional, must be done here.
Arrange the cookies on a lined baking tray, leaving a little space between each.
Bake for 10 minutes, or until the edges just begin to color.
Transfer to a wire rack and let cool completely.
